TOOF Tacos On June 10th as part of St. Austin’s Parish Service Day, the Council served breakfast tacos to the residents at The Other Ones Foundation (TOOF), an organization that provides transition housing and other services to its clients

Officer Installation Ceremony On June 28th the Council held the Officer Installation Ceremony followed by a BBQ dinner with family members. Our former District Deputy Pat Ortiz officiated and Associate Pastor Fr. Paolo Puccini CSP was chaplain for the event


New Addition to St. Austin’s church

The construction of our new St. Austin Catholic School (SACS) and Parish offices is nearing completion! After more than 2 years of functioning in temporary quarters, we will soon move into new and expansive facilities. This artist rendering (Photo 4) shows the existing church on the left and the new structure on the right. Only the trees are missing from the real-time view. Bishop Joe Vasquez of the Austin Diocese is scheduled to bless the new structure on Sept. 24th during the dedication ceremony. The tall structure in the background is the residential tower being built on church property. It is slated for completion in 2024.


Preparing for Move-In Planning for the move into our new facility started even while interior finish out work continues. SACS vacated its temporary location in South Austin in the first week of August, storing much equipment in the new facility in anticipation of classes starting on Sept. 5th. A Council member helped move all of the school’s computers. Another Knight has coordinated much of the communications systems. Last-minute details are being worked out by Move Queen Colleen and Facilities Manager Frank, a PGK of our Council. Two other Knights helped him erect storage shelves to hold all our stuff



Parish Office Move-In Day

On August 9th many parish volunteers and professional movers gathered early in our Ministry Center to start the long-awaited Move-In. But before expending a lot of energy, everyone fueled up on our “World Famous” breakfast tacos. Following a blessing by Fr. Paolo Puccini CSP (in ballcap), volunteers gathered at our makeshift serving line and enjoyed some socializing around the tables . Then the movers helped themselves to tacos , out-eating volunteers 2 tacos to 1. After everyone moved to their duty stations, the Knights posed for a group shot . And finally, here is a sneak peek at the professional grade serving line that we will use for taco breakfasts in the near future!
