Vol. 2, 2024 - 2025
October proved to be a very busy month for Council 11807, Our Lady of Guadalupe in Lubbock. The council sponsored their annual golf tournament raising over $4,000 towards their scholarship program on October 5. This is the fifth year for this Fall favorite for Caprock golfers.
This was immediately followed on October 6 with the annual parish Jamaica (pronounced ha-mai-ka) which is a Latino version of a parish fest. The knights helped organize the activity, sold hamburgers (sold over 2,000) with the GK emceeing the event. The one-day event raised over $50,000 for the parish. (Photo 1) It was a trial trying to keep up with the hamburger sales as depicting in this photo.
In between these major events the Knights spent October 19 repairing fences and gates and pruning trees at the residence of the Franciscan Sisters. Additional work will be done to further repair the fences. ( Photo 2) The brave band of tree climbers was led by GK Vince Carillo.
On the 27th they would normally man the parish stoves to prepare to serve breakfast after each Mass as its traditional for the Knights to serve a Tex-Mex breakfast every fourth Sunday. The menu consists of favorites like Menudo, papas con chorizo, frijoles. papitas as well as bacon, eggs and pancakes. Preparation for the monthly breakfast begins on Saturday afternoon. However, this Sunday the Knights again prepared hamburgers for the parish families as part of the Fall Festival. The festival encourages families to bring their children to participate in wholesome games and activities. (Photo 3)
